Now here’s a great event for a very worthy cause.  I am honored to say that I will be the guest chef for the next HealthBarn USA fundraiser. Part of the proceeds will be donated to Healing Meals, a program for families with ill children and seniors in need.  HealthBarn USA is leading the way for children and their families to participate in hands-on healthy-lifestyle education. Last month, I was contacted by its founder, Stacey Antine, who holds a Master’s of Science in Food, Nutrition and Dietetics from New York University.

If you have any concerns about nutrition and creating a healthier lifestyle for you, your children or any elderly people you may know, I highly suggest contacting Stacey.  She’s a real dynamo who’s eager to help, and she really cares.  Her enthusiasm over her mission (helping to educate children and families about good nutrition) is very inspiring and moving.  Stacey’s passion won me over within the first five minutes of our conversation.
HB-logo-transparent-v3-140px-hStacey recently started  an expansion of her HealthBarn USA via the HealthBarn Foundation.  Its first project Healing Meals is in the works.  This is a food-gifting program to help ill children with cancer and serious blood disorders maintain good nutrition, as well as their families. As we know, long term sickness of a loved one can adversely affect the health of family and loving friends over time.  Keeping up good eating habits and an overall healthy lifestyle during these times is very hard.  Stacey’s new program is a godsend for people who find themselves in this predicament.  Stacey also wrote a book, Appetite for Life, which you can check out here.  There are 100 nutritious “kid-approved” recipes in her book that will surely excite even the finickiest of eaters. All her work is from the heart, and she is one nutritionist who is making a great impact in her community.

In addition to raising money for a great cause, I’ll be teaching everyone how to make various dishes from the menu below.  All guests are encouraged (although it’s not mandatory) to get “hands-on” with the recipes as I teach and cook.  Stacey will be available to answer all your nutritional questions and explain further about HealthBarn USA and its future goals in our local New Jersey community  and projections across the USA!  Yes,  I like everything about HealthBarnUSA and Stacey Antine’s mission; now you can get excited and share it with your friends and family, too. 

My menu for HealthBarn USA:  

1) Franco’s Homemade Grissini (bread sticks), Prosciutto di Parma, Genoa Salami,Grana Padano Cheese, and assorted Italian Olives

2) Fennel and Orange Salad (Insalata di Finocchio e Arancia)

3) Spaghetti alla Chitarra (hand cut) with autumn squashes.

4) Black Peppercorn Ginger Crusted Salmon, Orange Honey-glazed Bok Choy, Wild Rice Griddle Cake, Saffron Cream

5) Chocolate Zabaglione  with Almond Biscotti
