If you like beets there are plenty of gorgeous red and yellow beets at the Farmer’s Market in Summit, New Jersey. This market is open from May until November every Sunday from 8 am – 1:30 pm. They do a great job in this market and their products are exceptional. The beets were looking really nice during my last visit to the market. So, for this week they became the inspiration for a red beet and feta salad. This recipe is a perfect way to enjoy beets during the warm summer months. However, this recipe can still be enjoyed throughout the year as long as you can still find fresh beets at your local grocery store.
